Towards the end of January in Cape Town, the beautiful Durbanville Wine Route will welcome an exciting new culinary destination. Wilde Vy Bistro. Located on the historic Hooggelegen farm, home of Signal Gun Wines, this bistro not only promises to be a feast for the senses, but also invites guests to experience its unique culinary offering when it opens its doors on Thursday, January 23.

A collaborative vision

Well-known South African chef Jürgen Snyman and Accra-based Ghanaian entrepreneurs Kwasi Osei-Kusi and Charles Bucknor created Wilde Vy Bistro. The trio first met in Cape Town during Snyman's tenure as executive chef at Kloof Street House, Asoka, and the Egghead restaurant group.

Because of that, their shared commitment to a customer-centric approach to hospitality has driven them to create a place that not only serves divine food but also nurtures the talents of its staff. Osei-Kusi and Bucknor invest in annual training for their team in Cape Town, guided by esteemed restaurateurs Liam Tomlin and Ivor Jones.

In June 2024, Snyman had the opportunity to join forces with Osei-Kusi and Bucknor at Hooggelegen Farm, driving the concept of Wilde Vy Bistro.

The design narrative

To bring their vision to life, the trio drew on their expertise from Design Build Collective (DB-CO), which crafted an interior design that pays homage to Hooggelegen Farm's rich heritage. The transformation of the former restaurant space reflects the careful process of wine production and is the epitome of patience as well as the timeless beauty of the six-generation farm.

DB-CO's design harmonizes with the surrounding landscape through the use of organic materials such as wood, rustic bricks and elegant concrete. It also has contemporary marble and brass touches that give it a modern feel. This thoughtful approach ensures that Wilde Vy Bistro is not just a restaurant, but rather an experience that resonates with the history of its location.

Culinary delights await you

The team at Wilde Vy Bistro carefully curated the menu to suit a variety of tastes and preferences, ensuring that every guest will find something to savour. They divided the menu into sections, including SMALL PLATES (Happies), RAW, SALADS, SEAFOOD, GRILL, VEGETARIAN, SIDEBOARDS, DESSERT and a dedicated KIDS MENU, designing the selection to appeal and satisfy diverse tastes.

Menu highlights include:

  • SMALL PLATES (Happy): Duck liver parfait with brioche and cherry granola
  • RAW: Citrus Cured Overberg Trout with White Garlic, Apple and Cucumber
  • SEA: Line fish accompanied by braaied bok choi, mussels and tikka masala
  • FIRE GRILL: Côte de Boeuf served with smoked eggplant, black garlic and steak sauce

DESSERT: Finally, indulge in a delicious chocolate, passion fruit and granola creation that promises to delight even the staunchest non-sweet tooth.
