Since its formation in 2016, Marble has become a pillar of South Africa's diverse and bold food culture. Co-founders, chef David Higgs and entrepreneur Gary Kyriacou, have introduced their fire-focused philosophy to Cape Town, mixing it with local seafood. traditions… Head chef Matt van Niekerk expressed his passion by stating that ““The concept of cooking with live fire may not be new anymore, but the way we do it at Marble is always a new experience. “That’s what excites us about Cape Town.” Fire has a way of bringing people together: it is the place where stories are shared, ideas come to life and connections are made.”
Marble Cape Town's menu focuses on the iconic Grillworks, delivering vibrant flavors through fire. Guests can enjoy starters such as snoek pate and lamb tartare, as well as enjoy main courses such as wood-fired Chalmar ribeye and mussel paella.
“One of the things I like most is how vegetables transform over the fire,” said chef David Higgs. “They develop a complexity and character that cannot be achieved any other way.” One of the standout dishes is roasted pumpkin with candied walnuts and burnt honey dressing. For dessert, guests can enjoy a selection of cheeses, crackers and pickles curated by Karen Dudley to key lime pie and the whimsical Cape Town passion fruit popsicle.
Of course, the Marble bar offers a wide selection of original cocktails. The select wine list also features premium local and international selections.
Stunning design inspired by the Mother City
Located in the historic Union Castle building, the 800 m² space features designs by Irene Kyriacou, showcasing the natural elements of Cape Town.
“The space evolves throughout the day,” said Irene. Whether for lunch, sunset or dinner, the design adapts to Cape Town's weather, from stormy days to vibrant sunsets. The outdoor terrace beautifies the dining and bar area.
Art is important to Marble, with locally inspired pieces by GRID, Krisjan Rossouw and a glass bead installation by Mash.T.
Additionally, a distinctive stainless steel roof mimics water reflections, complemented by Casamento's hand-stitched upholstery, combining tradition and modernity.
